Flavours of china – Sichuan Cuisine at Spice Kitchen, JW Marriott, Pune — Reviewed!

JW Marriott has again come up with a exciting and interesting food festival— Flavours of China - Experience the spices of Sichuan Cuisine which originates from a province of China and has now become one of the most popular cuisine all over the world. To maintain the authenticity of the dishes and spreading the in-depth knowledge about the hot-spicy cuisine, Chef Edward Ni has come to Pune all the way from JW Marriott, Beijing. This 16 days festival will treat patrons to authentic chinese along with Chef's signature dishes like...
  • Fried Shrimp Ball with Sichuan hot sauce
  • Stewed Pork Slices with Sichuan chilli sauce.

I was invited for the exclusive preview of the festival and to have some conversation with the chef. We had few minutes of discussion with the Chef Edward and Chef Mayur, the Executive Chef of JW Marriott, Pune. On the occasion, Chef Edward said, "I love experimenting with the different types of cuisines especially with Sichuan. I am looking forward to bringing the spices of China to the city of Pune".

 Here are the few excerpts about the cuisine...
  • Hot and Spicy taste with Sichuan Pepper
  • Important five fragrances - (Fennel, pepper, aniseed, cinnamon, and clove),
  • Seasonings include Sichuan pepper, black pepper, chili, broad bean chili paste, shallots, ginger, and garlic.
  • The widely used ingredients are pork, beef, fish, vegetables, and tofu.
  • Cooking vary according to the texture required, including stir frying, steaming and braising
  • Famous Sichuan Dishes include- Mapo Tofu, Kung Pao Chicken, Hot Pot etc.
Chef Edward also prepared Sour and Spicy Potato Julienne and Fried Chicken with Sichuan Pepper as sampling of from the menu.

  • Poached Pork with Pickle Chilli and Soy Bean Sauce

  • Gongbao Chicken with Spicy Sauce
  • Poached Grouper Fillet with Soya Bean Sauce
  • Fried Noodle with mixed seafood.
