Thalipeeth is a traditional Maharashtrian savory multi-grain flatbread.
The protein flour mix, often called "Bhajani," is typically made by combining ingredients like whole wheat, jowar (sorghum), bajra (pearl millet), besan (gram flour), rice flour, ragi (finger millet), and various lentils like chana dal and urad dal. Either you can make all the efforts to clean and combine the millets or opt for True Farm Protein Plus Organic Flour. Protein Plus Organic Flour Thalipeeth Recipe
This recipe aims to maximize protein and utilize organic flours for a healthier twist on the traditional Thalipeeth.
Ingredients:
For the Thalipeeth Dough:
- 1 cup of the prepared Organic Multigrain Flour
- ½ cup finely chopped organic onion
- ¼ cup finely chopped organic fresh coriander leaves
- 1-2 green chilies, finely chopped (adjust to taste)
- 1 tsp grated ginger
- ½ tsp organic turmeric powder
- 1 tsp organic sesame seeds (white or black, for crunch and nutrition)
- Salt to taste
- Warm water, as needed for kneading
- Organic cold-pressed oil or ghee, for cooking
Optional Additions:
- ¼ cup grated organic carrot or finely chopped organic spinach/fenugreek leaves.
- 2 tbsp crumbled organic paneer for protein.
Instructions:
1. Prepare the Thalipeeth Dough:
* In a large mixing bowl, take 1 cup of the prepared Organic Multigrain Flour. Add the finely chopped onion, fresh coriander, green chilies, grated ginger, turmeric powder, sesame seeds, and salt to taste.
*Add any optional additions you choose (grated vegetables, paneer/tofu, flaxseed meal).
*Mix all the dry ingredients and vegetables thoroughly with your hands.
*Gradually add warm water, a little at a time, and knead into a soft, pliable dough.
*The dough should be firm enough to handle but not too stiff. Cover the dough and let it rest for 10-15 minutes.
2. Shape the Thalipeeth
* Heat a griddle (tava) on medium heat.
* Take a small ball of dough (lemon-sized).
* Lightly grease a piece of butter paper or dampen a muslin cloth. Place the dough ball on it. Using your wet fingers, gently pat and spread the dough into a thin, circular flatbread (about 6-8 inches in diameter).
* You can make 2-3 small holes in the center of the Thalipeeth – this helps it cook evenly and absorb oil.
3. Cook the Thalipeeth:
* Once the griddle is hot, carefully transfer the Thalipeeth (along with the butter paper/cloth, then peel off the paper/cloth gently once it's on the griddle).
* Drizzle a little oil or ghee around the edges and into the holes.
* Cook on medium heat until the underside turns golden brown and crispy.
* Flip the Thalipeeth and cook the other side until golden brown and cooked through, pressing gently with a spatula.
* Repeat the process with the remaining dough.
5. Serve:
* Serve the hot Protein Plus Organic Flour Thalipeeth immediately with a dollop of fresh homemade organic butter or ghee, plain organic yogurt, a spicy chutney (like garlic chutney or peanut chutney), or a pickle.
Please Note: If you want to make Organic Multigrain Thalipeeth Bhajani (Flour Mix), please follow the below steps:
The Organic Multigrain Thalipeeth Bhajani (Flour Mix):
- ½ cup Organic Jowar (Sorghum) flour
- ½ cup Organic Bajra (Pearl Millet) flour
- ¼ cup Organic Ragi (Finger Millet) flour
- ¼ cup Organic Besan (Gram Flour)
- ¼ cup Organic Whole Wheat Flour
- 2 tbsp Organic Green Moong Dal (split green gram)
- 2 tbsp Organic Chana Dal (split Bengal gram)
- 1 tbsp Organic Urad Dal (split black gram)
- 1 tbsp Organic Coriander seeds
- 1 tsp Organic Cumin seeds
- ½ tsp Organic Fenugreek seeds (methi dana)
* Dry Roasting: In a dry pan, lightly dry roast each ingredient for the flour mix separately on medium-low heat until aromatic. Be careful not to burn them. This enhances flavor and shelf life.
* Roast the dals first, until they are slightly golden and fragrant.
* Then roast the whole grains (jowar, bajra, ragi, wheat).
* Finally, roast the spices (coriander seeds, cumin seeds, fenugreek seeds) until fragrant.
* Cool and Grind: Let all the roasted ingredients cool completely. Once cooled, combine them with the besan (which doesn't need roasting) and grind them into a slightly coarse flour using a powerful grinder or a flour mill. Store this "Bhajani" in an airtight container for future use.
