The beauty of a homemade burrito bowl lies in its "deconstructed" nature. Each component is prepared separately and then artfully arranged, allowing you to build your perfect meal. The foundation is typically a grain, like rice, followed by a protein-rich base, an assortment of fresh vegetables, and topped with zesty sauces and crunchy garnishes.
My secret weapon is the smoky salsa. Roasting tomatoes and adding a little smoked paprika and chili powder gives it a deep flavor that makes all the difference. It adds a warmth and complexity that a simple salsa just can't match. Another key ingredient is the creamy avocado-lime dressing. While a slice of avocado is nice, blending it into a smooth, tangy dressing elevates the entire dish, ensuring every bite is rich and flavorful.
The first component of the recipe is the Rice. We’ll use a simple yet flavorful cilantro rice. The fresh, citrusy notes are a perfect counterpoint to the richer elements of the bowl. Next, the star of our show: the protein. Kidney Beans when sautéed with onions, garlic, and a blend of Mexican spices, become a savory, hearty filling.
For freshness, we'll add a vibrant Salsa, a simple salsa made from diced tomatoes, onions, jalapeños, and cilantro.
This recipe is not just about following steps; it's about embracing creativity. Feel free to substitute ingredients based on your preference or what you have on hand. Don't like Kidney Beans? Use Black beans. Want more greens? Add some sautéed spinach or bell peppers. The possibilities are endless.
For the Cilantro-Lime Rice:
- 1 cup long-grain white rice, rinsed
- 2 cups water
- 1/2 teaspoon salt
- 1/4 cup chopped fresh cilantro
- Juice of 1 lime
For the Kidney Beans Filling:
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 200 gms Boiled Kidney beans, rinsed and drained
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon smoked paprika
- Salt and black pepper to taste
For the Salsa:
- 2 medium tomatoes, diced
- 1/4 red onion, finely diced
- 1 jalapeño, seeded and finely chopped (optional)
- 1/4 cup chopped fresh cilantro
- Juice of 1 lime
- Salt to taste
- 1 large avocado, sliced or mashed into guacamole
- Chopped Tomatoes and Onions
- Sliced jalapeños (optional)
- Salt
- Fresh Lime juice
Instructions:
Cook the Rice: In a medium saucepan, combine the rinsed rice, water, and salt.
Bring to a boil, then reduce the heat to a low simmer, cover, and cook for 18-20 minutes, or until the water is absorbed. Fluff with a fork, then stir in the cilantro and lime juice. Set aside. Make the Filling: While the rice cooks, heat the olive oil in a skillet over medium heat. Add the onion and cook until soft, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant. Stir in the Kidney Beans, chili powder, cumin, and smoked paprika. Cook for 5-7 minutes, allowing the flavors to meld. Season with salt and pepper.
Prepare the Salsa: In a small bowl, combine the diced tomatoes, red onion, jalapeño (if using), cilantro, and lime juice.
Season with salt and set aside. - Assemble the Bowls: Start with a generous bed of warm cilantro-lime rice. Layer on the spiced Kidney Beans and the Smoky Salsa. Add a handful of diced tomatoes. Finish with a drizzle of the creamy avocado-lime dressing, a sprinkle of cheese, and a few crushed tortilla chips. Garnish with extra cilantro.
