  • 3-4 cups (about 750ml - 1 liter) vegetable broth or water

  • Optional: ¼ cup Coconut milk or 2 tablespoons fresh cream (malai) for richness

  • For Garnish: Fresh coriander leaves, toasted pumpkin seeds, or a swirl of cream/coconut milk.

Instructions:

  1. Prepare the Tempering: Heat ghee or oil in a heavy-bottomed pot or pressure cooker over medium heat. Add the cumin seeds and let them splutter and turn fragrant, about 30 seconds.

  2. Sauté Aromatics: Add the chopped onion, Bay leaf, Black Pepper and cook until softened and translucent, about 5-7 minutes. Then, add the grated ginger, minced garlic. Sauté for another 2-3 minutes until fragrant, being careful not to burn the garlic.

  3. Add Pumpkin and Spices: Add the chopped pumpkin cubes to the pot. Add salt. Mix well to coat the pumpkin with the spices. Sauté for 5 minutes, stirring occasionally.

  4. Simmer/Cook: Pour in the vegetable broth or water.

    • If using a pot: Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the pumpkin is very tender and easily mashed.
