દૂધી ના મુઠીયા- DUDHI MUTHIA Recipe!

Dudhi Muthia
Dudhi na Muthia, Doodhi Muthia or Lauki Muthia is a traditional healthy Gujarati snack. Being a Gujarati I am sharing the authentic style of cooking Muthia. This one is multigrain; you can make it with addition or removal of any flour. The taste is awesome and it is super healthy as well. I have also made Beetroot Cutlets which are delicious and healthy. Muthias are steamed and not deep fried. So let's begin with the recipe....



Ingredients for Dudhi Muthia /Doodhi na Mutia....

1 small Dudhi/Lauki, peeled (Bottlegourd)
1.5 cups Jowar Flour (Sorghum)
1/2 cup Besan (Chickpeas Flour)
1/4 cup Dhokla Flour ** (5:3:2 Rice, Chana Dal, Urad Dal)
4 Tbsp Wheat Flour
1/2 cup Curd
1 Tsp Sugar
As per taste, Salt
1/4 Tsp Cooking Soda
1 Tsp Chilli Garlic Paste
2 Tsp Oil
1 Tsp Haldi Powder (Turmeric Powder)
1 Tsp Red Chiili Powder
1 Tsp Dhaniya Powder (Coriander Powder)
1 Tbsp Fresh Coriander Leaves

Method:
  • In a big vessel, grate the Dudhi/Lauki.
  • Add all the other ingredients.
  • With light hands, make a smooth dough. (Do not add water; add only small quantity, if required)
  • Take a small portion and make a cylindrical shape to make Muthia.
  • Place the Muthias in the steamer.
  • Cook for 15-20 minutes.
  • Once done, let them cool down.
  • Cut it into round shapes.

For the tempering::

2 Tbsp Oil
1 Tsp Rai (Mustard Seeds)
1/2 Tsp Heeng (Asafoetida)
2-3 Slit green chillies and curry leaves
1 Tsp Til (Sesame Seeds)

Method:
  • In a kadhai, add oil. Let it heat.
  • Add Rai, Heeng, Chillies and Til. 
  • Add Muthias. Mix well.
  • Garnish with fresh coriander leaves. 
  • Serve hot with coriander-mint chutney or ketchup.

Beetroot Cutlets - Healthy and Delicious Recipe!

We all need to have something delicious yet healthy. One of the most healthy superfood is the Beetroot. Though, I do not like its raw pungent smell, so I find out multiple way to consume it. But before that let me explain you why Beetroot is considered as the superfood. Here are some of the potential health benefits of it....

Beetroot is so versatile that you can make juice, salad, soups, pav bhaji, pulao or chutney. But today I will be sharing my favourite recipe – Beetroot Cutlets. They are easy to make, filling and equally delicious. So let's start. 
Healthy Beet Cutlets RecipeFollowing are the ingredients to make 6-7 pieces....
  • 1 medium sized boiled, peeled Beetroot
  • 1 medium sized boiled, peeled Potato
  • 1/2 cup finely chopped Capsicum/Bell Pepper
  • 1/2 cup powdered Poha (Flattened Rice)
  • 1/2 cup Bread Crumbs or Suji/Rawa
  • Salt as per taste
  • 1/2 tsp Chaat Masala
  • 1/2 tsp Red Chilli Powder
  • 1/2 tsp Cumin Powder
  • 1/4 tbsp Coriander leaves
  • Green Chillies paste as per taste
Method::
  • In a mixing bowl, grate the boiled beetroot. Take grated beetroot and press it gently to remove the excess water. Now add boiled potatoes. Mix.
  • Add in finely chopped capsicum
  • Add in Poha powder. (You can simply take the raw Poha and grind it for 10 second to make the fine powder). This is for the binding.
  • Add Chilli powder, Cumin powder, chaat masala, green chillies paste, salt. Mix well.
  • Take a small ball sized portion and shape them into cutlets.
  • Roll in bread crumbs or coarse Rawa/Suji.
  • Keep it in the deep freeze for 15 minutes.
  • Shallow fry, flip from both sides until golden brown.
  • Serve it with chutney or ketchup.

Easy Peasy my style of Bombay Sandwich Recipe!


What is your comfort food? Well, for me it has to be sandwich. I like sandwiches of any form - be it toasted or grilled or non-grilled. I crave for Sandwiches anytime and hence the ingredients are easily available in my pantry. Sometimes, I boil potatoes and make Potato Masala Grilled Sandwich with the spicy coriander-mint chutney. OMG! So yum. And when in hurry, I always opt for the basic Club Sandwich.

Today, in this post, I will be sharing an easy peasy Bombay Sandwich Recipe. And here are the ingredients....

Easy Steps:
  • Take one slice of bread. 
  • Slather it with butter then place cucumbers, onions, slices of potatoes, tomatoes. Sprinkle some chaat masala.
  • On another bread put some bombay sandwich spread (I used K's Kitchen, you can use any).
  • Place the slice on the buttered bread slice. 
  • Spread some ketchup over the top. Garnish with sev and some chaat masala.
  • Cut in to pieces. 



Homemade Beetroot Pav Bhaji - Healthy and Delicious!

We all love Pav-Bhaji and how! One pot meal, comforting and most demanded by kids. Pav Bhaji is one with which we can make kids eat all the veggies and the fussy-eaters will also relish it without throwing any tantrums! Usually, we make pav-bhaji by boiling all the vegetables like cauliflower, potatoes, beans, carrots, peas, onions and tomatoes and then crush them to temper in lip-smacking butter!

One fine day, I was planning to make pav bhaji and I had beetroot in my pantry, so thought of adding it to my regular Pav Bhaji. Usually, I don't like the taste of raw beetroot so I add it to my tomato soup to give a dash of rich color. I boiled all the vegetables along with beetroot and followed the routine process. The color was rich and the taste too enhanced. Since, then I have started using beetroots in my Pav Bhaji.  Enjoy the delicious Pav Bhaji with the butter toasted Pav bread and chopped onions in side.

3. The box should have some cutlery attachment or may be a bag to carry in it.
